Alcoholic beverages contain varying amounts of ethanol (alcohol) and play a significant social and economic role in our society. Some people go out only to “have a drink” and party; some love to have a few rounds of drinks before they eat, and many will continue drinking during dinner or after they are done with their meal! That’s why it is vital we can provide excellent service and great drinks to our patrons.
We enhance their experience, increase the revenue for the restaurant, and earn better TIP.
Here is how important alcoholic beverages are to the restaurant:
25% of the total restaurant revenue comes from drinks, but it accounts for 40% of the profit because the profit margins from beverages are much bigger than from food!
At the same time, a skilled waiter who sells more drinks, better wines, or even coffee and tea at the end of the evening adds to his check average and earns more money from the bigger tip.
This lesson aims to give you the basics knowledge of the top brands in the world, how a classic cocktail looks, and its ingredients. It would be best if you were quick and efficient when taking the orders, working with the computer, and picking up the drinks from the bar.
Here are a few quick examples:
- A guest orders a screwdriver, and instead of you bringing him a drink, you call a technique and send a real screwdriver to the guest. It happens.
- Guests order Whiskey sour and The old-fashioned. You go to the bar to pick it up, and you have to serve it. The problem is that you don’t know what is what. So you have to ask the bartender or the guests, which is embarrassing.
- A guest orders Daiquiri and you go to the computer to punch it in, but you don’t know it is a Rum cocktail, and you can’t find it. You are wasting time, and again, you need help from another waiter for something so simple.
Those cases are only a few examples from real life in the restaurant. Unfortunately, all of them have happened in my practice, and I can assure you, it is not pleasant to be the person who commits mistakes like these.
